You can also choose to have Siri announce notifications on a per-app basis if you want to hear notifications from certain apps that aren't time-sensitive.

◉ Then go to Notifications.

◉ Under Siri, select Announce notifications, then turn it on.

◉ To have Siri announce all notifications from a particular app, just select the respective app in the list under “Announce notifications from” and activate it.

Note that if the notification supports actions, Siri will listen for your response after reading the notification, so you don't have to say "Hey Siri" to follow it.
